What we believe at Ayu
There is a hotel near Mount Fuji that has been run by the same family for fifty-two generations. A Japanese construction company built temples for over a thousand years. The common thread is patience. Build for decades, not quarters.
That's the model we have in mind for Ayu.
The Australian wine trade has plenty of beautiful brands. What it doesn't have is the infrastructure underneath them. The unsexy financial plumbing that lets a great producer get paid on time and a great venue run a clean program without losing their weekend to a spreadsheet.
So we built it. Around five things we believe.
Five principles
Quality Driven. Every decision is anchored in craft, rigour, and respect for the trade. We prioritise depth over shortcuts and hold Ayu to the same standards as the best venues, producers, and professionals who use it.
Made with Purpose. Nothing exists by accident. Every feature, workflow, and detail solves a real problem and earns its place through usefulness, clarity, and impact.
Daily Rhythm. Ayu is designed to live inside the daily rhythm of hospitality. Practical, intuitive, reliable. A tool you return to, not one that gathers dust.
Achieving Together. Ayu is built alongside the industry, not handed down to it. We listen first, build with our partners, and measure success by theirs. If the people using Ayu aren't winning, neither are we.
Never Finished. We don't believe in done. Ayu is permanently in motion, refining, reconsidering, rebuilding what could be improved. Drawn from the trade, shaped by use, and honest enough to know we'll never have all the answers.

Australia has 55,700 cafes and restaurants (Australian Bureau of Statistics, FY2024). According to CreditorWatch's January 2026 Business Risk Index, 10.4% of food service businesses closed in the past year. The highest rate of any industry, and double the economy-wide average. Behind every closure is a sommelier, a venue manager, an F&B or Wine Director, a winemaker, a distributor, or a wine sales rep doing the work on tools that weren't built for them. Each closure takes down a circle of people with it.
The trade is bigger than any one company. But the infrastructure underneath it, the connective tissue that lets a producer get paid and a venue run a clean program, is buildable.
That is what Ayu is.
The Australian wine trade has spent the last twenty years shedding the people who made it worth working in. I've felt it speed up in the last five. Talented Sommeliers, F&B Directors, winemakers who deserved to be hired and weren't, sales reps who couldn't get a callback. They left for adjacent industries, different careers, or got tired and stopped. The reasons given were always individual. Burnout. Family. A better offer elsewhere. The pattern was collective.
The systems were fragmented. The hours were long for reasons that had nothing to do with wine. The work was being shaped by software that hadn't been designed for it. The frustration compounded across years.
Ayu exists because we believe the people who love this work should be able to keep doing it. Not because the work got easier, but because the parts of the work that should never have been work in the first place got fixed.
Who we're building for
If you're a sommelier quietly building one of the most considered wine lists in the country, and you're doing it on three spreadsheets and an InDesign or Canva template, we built Ayu for you.
